Do not select by the number of holes alone. Compare the complete closed geometry at the portion height you actually serve. If a candidate vents only while open, or its opening is routinely covered in your make line, treat that as a failed condition for the trial.
2. Does the food stay away from moisture at the base?
Check how the chicken sits inside the filled pack. A flat base, a liner, a tray insert, or a shaped interior can change where grease and moisture collect. The point is not to assume that any one base design is better; it is to see whether the underside of the chicken makes contact with visible liquid during your actual hold.
Specify the liner separately. It should fit without folding over the food or covering a proposed vent path. Trial the final liner construction, not a convenient substitute from the kitchen, because a liner can change headspace, moisture contact, closure pressure, and the way the pack is assembled.
3. Does the closure match the order's liquid risk?
Fried chicken may travel with sauce cups, pickles, slaw, or other wet components. Those items create a different risk from steam. Keep dips and sauces out of the chicken compartment where the menu allows, and test every cup at the intended fill level and orientation beside the hot chicken pack.
A more open package is not automatically suitable when an order needs liquid containment. If the order combines crispy chicken with a wet side, compare a separated compartment, a separate sauce carrier, or a second package. Choose the configuration that passes both texture and containment checks for that exact order instead of forcing every menu item into one format.
4. Can the pack survive the route outside the kitchen?
The final condition is often set after the box leaves the pass. Put each candidate through the delivery bag, normal stacking height, vehicle movement, and typical handoff delay that your customers experience. Note whether the lid flexes, vents become covered, the container crushes, or a wet component contacts the chicken pack.
Run separate scenarios for pickup, a short delivery, and your longer common route. A configuration that is acceptable for a brief handoff may be unsuitable for a stacked dispatch. Do not convert a result from one route into a promise for another.
5. Can the operation keep texture and safety as separate controls?
Texture testing cannot replace food-safety management. During the trial, log food temperature at packing, dispatch, and opening alongside the route time, then compare the result with your local food code and your own approved controls. The 2022 FDA Food Code states that, except for listed exceptions, time/temperature-control-for-safety food under hot holding is maintained at 57°C (135°F) or above.[1] That is a model-code reference, not a substitute for the rules and procedures that govern your location.
If a texture-oriented change causes a temperature-control problem in your operation, reject or redesign the pack workflow. Record the measurement method and corrective action rather than treating a packaging description as a safety conclusion.
Should you punch holes in a paper bag?
Treat manually punched holes as a temporary operational experiment, not as a repeatable packaging specification. Their size, placement, and spacing can vary between shifts; the bag can fold onto the food; and an outer bag or stack can still obstruct the route. A bag test may be useful as a low-cost control while you source samples, but it should be tested under the same delivery-bag, portion, and route conditions as the containers it is compared with.
If a bag is retained for pickup, document the exact fold, opening pattern, food quantity, and maximum intended handoff window. Do not infer a longer delivery result from a single counter test.
Run a small menu-and-route trial before you buy
A practical trial compares two or three pack systems, not just two empty containers. Use the same chicken recipe and cook cycle, comparable portion weights, the final sauce setup, and the normal dispatch bag. Include a baseline pack currently used by the operation.
For each run, record:
- pack ID, closure state, liner, and proposed vent locations;
- portion count or weight, packing time, dispatch time, and opening time;

Once a candidate passes, write the request so a supplier can quote and sample the same pack you tested. Include the normal portion footprint and height, required headspace, final closure, drawing or proposed vent locations, liner or insert, any sauce separation, printing area, packing orientation, expected quantity, and destination.
Also ask which documentation is available for the exact finished construction and intended market. Do not assume a material name proves food-contact status, heat suitability, grease performance, compostability, recyclability, certification, availability, price, MOQ, or lead time.
